Your Mother’s loves a challenge, as well. In this case, the task was to brew a low calorie, low carb beer that delivered the flavor and drinkability craft beer lovers demand of an India pale ale. The brain trust in the brew house set to work, introducing a handful of processes unique to Courage Partner. The beer begins with a simple, light grain bill of two row pale malt with a touch of caramel malt for a hint of sweetness. We then mashed the wort to a slightly higher than necessary gravity, which was then diluted to the desired gravity with pure water. This unusual step prevented the wort from developing any unwelcome tannic astringency. Cascade hops in the boil provide the hop character of a classic American IPA. In the cellar, we employed a lager yeast strain fermented at a warmer temperature that is warmer than usual for this yeast. The attenuated beer is clean and crisp, with a mild fruitiness from ester production in the fermentation. Our dry-hopping routine also involved exploring some new paths. Additions of Amarillo and El Dorado hops were supplemented with concentrated Centennial lupulin hop powder for all the juicy and resinous flavors with significantly less vegetal presence to obscure the bright, candied lemon and citrus character of the beer. All in all, delivering a beer unlike any we’ve ever brewed required an approach unlike any we’ve taken. Challenge accepted. And vanquished.
